desapenari.id – Lombok tak hanya terkenal dengan Ayam Taliwang. Pulau ini juga memiliki hidangan sayur khas bernama olah-olah. Sayur sederhana ini berasal dari desa Tetebatu dan dikenal dengan rasa gurih segar.

Olah-olah mirip lodeh, namun menggunakan santan kental dan bumbu terasi. Racikannya memakai sayuran hijau segar seperti kacang panjang, kangkung, atau daun pakis. Tambahan cabai memberikan cita rasa pedas yang khas.
Kali ini, kamu bisa membuat olah-olah dengan bahan kacang panjang dan tauge. Sajikan dengan siraman areh atau santan kental agar rasanya semakin nikmat.
Resep Olah-olah Khas Lombok
Bahan:
- 6 batang kacang panjang, potong 3 cm
- 100 gram tauge segar
- 1 buah cabai merah, iris serong
- 300 ml santan sedang
- 200 ml santan kental (areh)
- 2 sendok teh garam
- 1 sendok teh gula pasir
Bumbu Halus:
- 6 butir bawang merah
- 3 siung bawang putih
- 1 buah cabai merah besar
- 2 butir kemiri
- 1 sendok teh terasi
Taburan:
- Bawang merah goreng
Cara Memasak:
Rebus kacang panjang hingga setengah matang, lalu tiriskan.
Rendam tauge dalam air panas hingga layu, kemudian angkat.
Panaskan minyak dan tumis bumbu halus hingga harum dan matang.
Tuang santan sedang, masak hingga mendidih sambil diaduk rata.
Masukkan kacang panjang, aduk sebentar lalu angkat.
Sajikan di piring, tambahkan tauge di atasnya dan siram dengan santan kental.
Taburi bawang goreng sebelum disajikan.
Tips: Gunakan sayuran segar seperti kecipir atau pakis sebagai variasi.
Rebus sayuran sebentar agar tetap renyah dan segar.
Jika tidak ada areh, kamu bisa menggantinya dengan blondo.
