Sejarah Bubur Sabilal
Ani, generasi ketiga pembuat bubur Sabilal, meneruskan tradisi keluarganya yang sudah berlangsung sejak tahun 1981. Resep turun-temurun dari neneknya tetap ia pertahankan hingga kini.
“Sejak awal Masjid Sabilal berdiri, nenek saya bersama temannya mulai membuat bubur untuk berbuka puasa di sini,” ujar Ani kepada detikKalimantan, Rabu (19/3/2025).
Menurut Ani, ide membuat bubur ini berawal dari keinginan neneknya untuk menyediakan hidangan berbuka yang sederhana, mengenyangkan, tetapi tetap ringan bagi perut. Seiring waktu, bubur ini semakin populer di kalangan masyarakat Kalimantan Selatan.
Ciri Khas Bubur Sabilal
Bubur Sabilal memiliki cita rasa yang gurih dengan aroma khas dari minyak samin. Berbeda dari bubur ayam biasa, bubur ini mengandung campuran wortel, kentang, dan potongan tulang sapi yang menambah kelezatannya.
Ani menyebutkan bahwa pada masa ibunya, bubur Sabilal bahkan pernah mendapatkan penghargaan dari Gubernur karena keunikannya.
Proses Pembuatan dan Jumlah Konsumsi
Setiap hari, Ani bersama sepuluh anggota timnya memasak bubur dalam jumlah besar. Pada hari biasa, mereka menyiapkan tiga panci besar bubur, sementara di akhir pekan jumlahnya bertambah.
“Satu panci bisa memuat tujuh liter beras. Dalam sehari, kami memasak sekitar 21 hingga 25 liter beras,” jelas Ani.
Untuk berbuka puasa di Masjid Sabilal, mereka menyediakan 100 hingga 150 porsi bubur per hari. Pada akhir pekan, jumlah ini bisa meningkat, terutama saat ada pesanan dari masyarakat atau acara buka bersama.
Selain untuk masjid, Ani juga menerima pesanan dalam jumlah kecil dari warga sekitar. Tradisi bubur Sabilal yang telah berlangsung selama puluhan tahun ini tetap terjaga hingga kini. Ani berharap generasi selanjutnya akan terus melestarikannya.
Antusiasme Warga
Erna, seorang warga Banjarmasin Selatan, selalu menantikan bubur Sabilal setiap Ramadan. Ia rela ikut antre bersama puluhan warga lainnya demi menikmati bubur khas ini.
“Rasanya khas, aromanya juga unik. Saya belum pernah menemukan rasa seperti ini di tempat lain,” ujar Erna.
