- 1/2 cm jahe
- 1 sdt terasi goreng
- 1 sdt garam
Cara Memasak:
- Cuci bersih hati sapi dan potong dadu sekitar 1,5 cm. Goreng hati sapi hingga agak kering, lalu tiriskan.
- Goreng kentang hingga lunak dan agak kering, kemudian tiriskan.
- Panaskan minyak dan tumis bumbu halus hingga harum. Tambahkan daun salam, lengkuas, daun jeruk, cabe merah iris, dan cabe bubuk. Aduk hingga layu.
- Masukkan hati sapi dan kentang goreng. Tambahkan kaldu jamur, gula Jawa, dan tuangi air. Aduk hingga mendidih dan agak kering.
- Matikan api dan sajikan hangat.
2. Sambal Hati Petai
Sambal hati petai adalah hidangan pedas dengan paduan hati ayam dan ampela ayam yang gurih. Ditambah dengan petai yang memberikan rasa segar dan renyah.
Bahan-Bahan:
- 250 g hati ayam
- 250 g ampela ayam
- 1 batang serai, memarkan
- 2 cm lengkuas, memarkan
- 3 lembar daun jeruk
- 2 papan petai, kupas
- 10 buah cabe rawit merah
- 1 batang daun bawang, iris serong
- 1 sdm kaldu jamur
- 1 sdt gula pasir
- 1 sdt merica bubuk
- 2 sdt garam
Bahan Bumbu:
- 10 butir bawang merah
- 4 siung bawang putih
- 6 buah cabe merah keriting
- 10 buah cabe rawit merah
- 3 cm jahe
Taburan:
- Bawang merah goreng
Cara Memasak:
- Rebus hati dan ampela ayam hingga lunak, angkat, dan tiriskan. Potong-potong kasar hati dan ampela ayam.
- Blender semua bahan bumbu hingga halus. Tumis bumbu halus hingga mendidih.
- Masukkan serai, daun jeruk, lengkuas, dan petai. Aduk hingga rata.
- Tambahkan potongan hati dan ampela ayam, lalu aduk rata.
- Bumbui dengan garam, kaldu jamur, gula, dan merica. Tuangi sedikit air dan masak hingga mendidih.
- Tambahkan cabe rawit merah dan daun bawang, aduk hingga rata dan agak kering.
